Baked Jerusalem Artichokes

Great as a side-dish with your favourite meal.

Ingredients:

  • 1 tbsp. Olive Oil
  • ½ cup Red Pepper, chopped
  • 1 clove garlic
  • ¼ cup onion, 
  • 1 cup Jerusalem Artichoke, peeled & cut up
  • Salt & pepper to taste

Directions:

Mixed all ingredients together. Bake at 375°F for 20 minutes.
