Cheddar Broccoli Egg Muffins

Makes 6 muffins

Ingredients:

4 large eggs

1 cup steamed broccoli

½ cup sharp cheddar, shredded

Salt & pepper to taste (about ½ tsp each)

Directions: 

  1. Preheat oven to 350°F, grease 6 muffin tins.
  2. Chop broccoli & whisk together with eggs, salt & pepper.
  3. Pour egg mixture into muffin tins & divide cheese evenly among them.
  4. Bake for 12-15 minutes or until eggs are set.
