Try steaming and chopping the broccoli the night before (sealed in a container) so it’s ready to add to the eggs in the morning. Shred the cheese and keep it in a zipped bag. Combining the ingredients will be quick and easy, and they’ll be cooked by the time your coffee is ready and your juice is poured. Makes 6 muffins
Ingredients:
4 large eggs
1 cup steamed broccoli
½ cup sharp cheddar, shredded
Salt & pepper to taste (about ½ tsp each)
Directions:
- Preheat oven to 350°F, grease 6 muffin tins.
- Chop broccoli & whisk together with eggs, salt & pepper.
- Pour egg mixture into muffin tins & divide cheese evenly among them.
- Bake for 12-15 minutes or until eggs are set.
