This Chicken with Apples & Cranberries recipe is a quick and easy entrée for everyday, or as part of a special meal to serve when company comes over. You can use either white of dark meat, whichever you prefer but just know that the dark meat contains a few more calories.

Chicken is a lean protein, an excellent source of amino acids, and helps to build muscle. It is also rich in B vitamins and some minerals. The apples, juice and dried cranberries in this recipe add to the nutritional benefits. These fruits contain vitamins, antioxidants and dietary fibre.
Ingredients:
2/3 c. apple juice
1 tbsp. packed brown sugar
2 tsp. lemon juice
1-1/2 tsp. Dijon mustard
1-1/2 tsp. cornstarch
1 tbsp. butter
6 chicken breasts, halved lengthwise
2 green onions, chopped
1 apple, peeled, cored & diced
1/4 c. dried cranberries
Directions:
Combine the first 5 ingredients & set aside. In a frying pan, melt butter & brown the chicken on all sides. Pour the apple juice mixture over chicken, cover & simmer until chicken is almost cooked thru. Add onions, apple & cranberries. Simmer about 10 minutes. Serve over rice with a side vegetable. (Great with broccoli).
