This strawberry goat cheese bruschetta is a healthy appetizer for those special dinner guests or perfect for an after dinner treat.

First of all, the base of this bruschetta is a slice of Ezekiel bread, a high nutrient dense bread made from sprouted whole grains. It is high in natural fibre and due to the sprouting, has increased digestibility. Goat cheese contains anti-inflammatory enzymes, probiotics, antioxidants, proteins, and lipids and help maintain a healthy metabolism. It is also high in calcium, vitamins A and K, phosphororus, thiamin and niacin. Add the goodness of strawberries, packed full of vitamins and minerals, and you have a nutritionally excellent snack that will compliment any pre-dinner menu or after dinner treat.
Ingredients
1/2 c. balsamic vinegar
6 slices Ezekiel bread
1 tbsp olive oil
2 c. strawberries, washed & diced
2 tsp. fresh thyme leaves (+ more for garnish)
Salt & pepper to taste
Directions
- Heat vinegar over med-low heat, simmer until reduced by ½ (8-10 min)
- Cool to room temperature.
- Drizzle olive oil on bread & grill (or toast) until browned.
- Combine strawberries & thyme in small bowl, set aside.
- Add salt, pepper & vinegar to strawberry mixture. Spread goat cheese on bread. Spoon strawberry mixture onto goat cheese bread. Garnish with additional thyme.
