Ingredients
- 2-2/3 cups rolled oats
- 1 large egg
- 1/3 cup maple syrup
- 3 tbsps. Melted coconut oil
- 1-1/3tsp baking powder
- 1 tbsp. vanilla
- 2 tsp cinnamon
- ½ tsp sea salt
- 2/3 cup chia seeds
- 1/3 cup blueberries (frozen)
- 1 ripe banana peeled and sliced into small pieces
- 2-1/3 cup milk (I use plain rice milk)
Preparation
Preheat oven to 375F and generously coat the inside of a 13” x 9 ½” baking dish with oil.
In a large bowl mix together oats, baking powder, cinnamon, salt, chia seeds, blueberries and banana.
In another large bowl whisk together the milk, egg, syrup, vanilla and oil.
Mix the wet ingredients into the dry, then pour into the pan.
Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of brown sugar.
