4 large eggs
1 tbsp onion, chopped
1/4 bell pepper, sliced
1c broccoli, steamed & lightly chopped
1/4c shredded cheese (your choice)
salt & pepper to taste
- Whisk together eggs, onions, salt & pepper
- Coat frying pan with 1 tsp. olive oil. Heat
- Pour egg mixture in pan. Add broccoli & peppers on top. cover pan.
- Cook slowly until firm. Remove from heat & sprinkle cheese on top. Cover until cheese melts.
- Fold in half. Divide. Serves 2
