Are these easy no-bake energy bites healthy?
This easy snack combines the goodness of oatmeal (loaded with antioxidants and soluable fibre) and peanut butter (which is loaded with healthy fats, protein, fiber, and a variety of essential vitamins and minerals). Healthline
Dried fruit is highly nutritious, containing close to the same amount of nutrients as fresh fruits, but in a smaller form. Be careful, though, as they also have a high sugar count.
Everyone will enjoy this healthy afternoon snack, so be sure to have lots on hand. One recipe won’t last long.
Ingredients:
½ cup creamy peanut butter (or other nut butter)
1 cup dry oatmeal
⅔ cup chopped super fruit (dates, cranberries, figs, blueberries, raisins)
⅓ cup honey
½ cup semi-sweet chocolate chips
⅓ cup ground almonds (or other nut)
Instructions:
- Dump all ingredients into a large bowl and mix well.
- Cover with plastic wrap and chill for one hour in refrigerator.
- Roll 1 tablespoon at a time into tight ball. Place on wax paper lined cookie sheet. Freeze on cookie sheet for 3 hours. Transfer to a plastic bag and store in fridge (1 week) or freezer (3 months).
