This easy vegetable stir fry works great as a side. Use the veggies we’ve suggested or substitute with what you have on hand. Save time by cutting them in pieces before you head out the door and seal in a container in the fridge until dinner preparations begin. It’s a fast easy medley to make any meal nutritious and delicious.
Ingredients:
2 tbsp. olive Oil
½ tsp. minced garlic
1½ c. broccoli florets
1½ c. cauliflower
One red pepper, sliced
One green pepper, sliced
1 c. mushrooms, sliced
½ c. red onion, chopped
2 tsp. sesame seeds, toasted
Tbsp. fresh squeezed lemon juice
Italian or Greek seasoning to taste
Directions:
Using a large frying pan, heat oil and saute the garlic until fragrant.
Once you can smell the garlic, add all vegetables to the pan and cook gently until vegetables are warm crisp, stirring occasionally.
Finally, drizzle vegetables with lemon juice, add seasoning and toss together.
Sprinkle with sesame seeds and serve as a side with meat of your choice.
