Homemade Chicken Soup

This homemade chicken soup will taste just like ‘Mom’ used to make, perfect for a cold winter’s night, or to sooth cold symptoms, or just a hearty meal.

INGREDIENTS:

4 cups chicken stock (low salt)
3 cooked chicken breasts, cubed
1⁄4 chopped onion
20 baby carrots, sliced (thick)
4 celery stalks
3/4 cup white rice, cooked
1 tbsp. lemon juice
1⁄2 tsp. soya sauce (low salt)
Salt & pepper to taste

DIRECTIONS:

In a large pot, add carrots, onion & stock and bring to a boil. Reduce to medium and simmer about 5 minutes. Add celery and chicken. Simmer about 10 minutes. Add remaining ingredients and cook until vegetables are soft crisp. Serve this homemade chicken soup with your favourite bread or toast.
