Roasted Tomato Red Lentil Soup

“Rich in dietary fiber, folate, iron and lentils are high in lean protein”

Ingredients:

Bake in 420°F oven until braised:

6 – 7 cups plum or roma tomatoes

1 large sweet onion

6 cloves garlic, crushed

1 tsp. kosher salt

½ tsp. fresh ground black pepper


Let cool.  While blending with hand blender, add:

1 cup red lentils 

1 -2 veggie cubes

4 cups water 

Simmer on low with 2 medium bay leaves until lentils are soft. 

Add 1 teaspoon sea salt.
