This Roasted Tomato Lentil soup will warm your insides on a cold day and provide you with the nutritional boost your body needs.
What makes this roasted tomato red lentil soup so healthy?
This soup is not only rich in dietary fiber, folate, and iron, the lentils are high in lean protein. Tomatoes are an excellent source of vitamins C & K, and are low in calories and cholesterol free. They are also loaded with lycopene, an antioxidant that may help protect your eyes, your heart and fight off damaging free radicals.

Ingredients:
Bake in 420°F oven until braised:
6 – 7 cups plum or roma tomatoes
1 large sweet onion
6 cloves garlic, crushed
1 tsp. kosher salt
½ tsp. fresh ground black pepper
Let cool. While blending with hand blender, add:
1 cup red lentils
1 -2 veggie cubes
4 cups water
Simmer on low with 2 medium bay leaves until lentils are soft.
Add 1 teaspoon sea salt.
