What makes this spinach & cheese egg bake so healthy?

Ingredients
- 5oz organic fresh spinach (4 cups packed)
- 1-2 tsp olive oil
- ½ cup mozzarella, grated
- 1 ½ tbsps. grated parmesan or feta cheese
- 2-3 tbsps. thinly sliced sweet Vidalia onion
- ½ cup sweet red pepper
- 8 eggs beaten
- Salt and pepper to taste
Preparation
Preheat oven to 375F/190C. Lightly coat an 8 1/2” x 12” glass casserole dish with olive oil.
Heat oil in a large frying pan, add spinach all at once and stir just until the spinach is wilted. Transfer spinach to the casserole dish, spreading it around to cover the bottom of the dish. Layer the cheese, onion and sweet pepper.
Beat the eggs, add salt and pepper to taste. Pour the egg mixture over the spinach/cheese combination then use a fork to gently stir the egg so that it covers all layers.
Bake about 35 minutes or until the mixture is completely set and starting to brown. Let cool approximately 5 minutes before cutting.
Serve warm!
