This strawberry spinach salad is a refreshing summer salad, perfect as a light lunch or as a side with your evening barbecued meal. It is combines the nutritional value of healthy greens with a tasty fruit and heart healthy almonds.
What makes this strawberry spinach salad so healthy?
Spinach is a nutrient rich vegetable which is high in soluble fibre, helpful with digestion. It is also packed full of vitamins (A, B7, C & K1), and is an excellent source of iron and calcium. By combining almonds & strawberries with spinach, you increase the vitamin C content, as well as important minerals such as manganese, & potassium. Ingredients
Dressing:
1 tbsp. poppy seeds
1/4 c. white sugar
1/4 c. olive oil
2 tbsp. white vinegar
1/8 tsp. paprika
1/8 tsp. Worcestershire sauce
1½ tsp. minced onion
Salad:
10 ounces fresh spinach
2 c. strawberries, sliced
1/4 c. slivered almonds
2 tbsp. sesame seeds
Directions
- In a medium bowl, whisk together the first 7 ingredients.
Cover & chill for 1 hour.
- Rinse, dry & tear spinach into bite-size pieces, and combine with strawberries & almonds in a large bowl. Pour dressing over salad & toss. Sprinkle sesame seeds. Serve immediately.
