Sweet Watermelon Pizza

Healthy enough for breakfast, sweet enough for dessert.

Ingredients:

1 watermelon round cut into 8 pieces

1 cup Greek yogurt

3 tbsp. Shredded Coconut

8 Mint leaves

½ – ¾ cup Berries of choice (blueberries, strawberries, blackberries, etc)

2 tbsp. slivered almonds

Preparation:

  1. Spread yogurt to cover watermelon pieces, leaving room to hold the rind.
  2. Sprinkle  with coconut, berries, then almonds.  
  3. Garnish with mint leaves.
